I recommend using all ingredients / not skipping anything, sesame oil and oyster sauce are key ingredients. I’m not overly knowledgeable about beef cuts, I just slice the stew beef thin (but I cook for a few hours up to 90 minutes) and it’s fab every time. I agree, it needs to be HOT for the sauce to thicken. I closed the stew pot once because the meat was made and we were not ready to eat yet, then I opened it again, but it was not hot enough to really thicken.

    Can I cook this faster?
    The temperature of your stew may differ from mine, I suggest you cook it for the first round of this dish for 4 hours.

    6 hours in Crockpot seems to give many people “chopped” beef instead of slices, so reduce cooking time by 2 hours and go from there.

    Mine was good for 6 hours.
